  • Reykjavík Summit

    Creator: Ásgeir Már Björnsson

    Ingredients:

    4,5cl bourbon (Ideally Buffalo Trace but Jim Beam is fine)

    1,5cl Birkir snaps

    1,5cl Sugar syrup (1.5 part sugar to 1 part water)

    3cl Fresh lemon juice

    2cl Champagne

    Egg white

    2-3 sprey Black Lapsang Souchong tea

    Method: All ingredients, apart from champagne and tea, added into a shaker and shaken vigorously without ice. Add ice and shake again. Double strain into a cold cocktail glass which has been sprayed inside and out with the tea and top up with champagne. Garnish with orange peel.

    Creator: Bruno Falcao

    Ingredients:

    3cl Björk liqueur

    3cl Ginger syrup

    3cl Fresh lime juice

    3cl Sour Apple De Kuyper

    Method: Pour all ingredients into a shaker and shake well with ice. Fine strain into a double old fashioned glass. Garnish with a birch leaf and a slice of apple.

    Is currently sold at UNO restaurant, Hafnarstræti 1 – 3.

    Ingredients:

    3cl Birkir snaps

    1cl Lemon juice

    1cl Simple syrup

    Champagne to fill up the glass

    Method: Shake all ingredients, except champagne, together and fine strain into a coupe glass. Top up with champagne and garnish with a lemon peel.

  • Birki Dropi

    Creator: Leó Ólafsson

    Ingredients:

    3cl Birkir snaps

    3cl Cointreau

    3cl Lemon juice

    3cl Birch syrup

    Egg white

    Method: Dry shake all ingredients without ice for a few seconds, add ice to shaker and shake vigorously and strain over fresh ice into a double rocks glass. Garnish with slice of lemon and a birch twig.

    Ingredients:

    6cl Bulleit Rye Whiskey

    3cl Birkir snaps

    1.5cl St. Germain liqueur

    Dash of lavender bitters

    Method: Pour all ingredients over ice in a mixing glass and stir to chill and dilute. Strain into a coup glass and garnish with a birch twig.

    3 cl Strong Earl Grey tea

    3 cl Honey syrup (1 part honey to 1 part water) 1,5 cl Triple sec

    1,5 cl Limoncello

    2,5 cl Fresh lemon juice

    Method: Add all ingredients into a shaker and shake well. Strain into a cocktail glass and garnish with a birch leaf.

  • Lord Hinchinbroke Fizz

    Creator: Joe Schofield in collaboration with Tony Conigliaro

    Ingredients:

    5ml Björk liqueur

    15ml Antica Formula

    100ml Perrier Jouet Champagne

    Method: Build all ingredients in Champagne flute.

    The drink is listed on the menu at the Zetter Townhouse, London.

  • A Walk in the Woods

    Creator: Ólafur Örn Ólafsson

    Ingredients:

    4cl Mild gin

    3cl Björk liqueur

    Method: Pour all ingredients over ice in a mixing glass and stir to chill and dilute. Strain into a coup glass and garnish with a pickle and birch twig.

    Ingredients:

    3cl Birkir Snaps

    1.5cl Dry Curaçao

    3cl Lemon juice

    2.25cl Honey

    Mint

    Method: Shake all ingredients together with ice and fine strain over fresh ice into an old fashioned glass.

  • Björk Espresso

    Creator: Ólafur Örn Ólafsson

    Ingredients:

    3cl Espresso Coffee

    3cl Björk liqueur

    2cl Patron XO Café

    1cl Fresh orange juice

    Method: Add all ingredients into a mixer and shake vigorously. Strain into a cocktail glass and squeeze the oil from an orange peel over the glass. Garnish with orange peel.

  • Reykjavík Mule

    Creator: Ólafur Örn Ólafsson

    Ingredients:

    6cl Birkir snaps

    Ginger beer to fill up the glass

    2 slices of fresh ginger

    Method: Build up in a large tumbler filled with ice. Slices of ginger mixed into the drink and garnish with a slice of orange.

  • Björk Tonic

    Creator: Ólafur Örn Ólafsson

    Ingredients:

    5cl Björk liqueur

    Tonic water to fill up the glass

    Method: Build up in a double rocks glass filled with ice. Top up with good quality tonic water and garnish with citrus peel.

  • Birkir Old-Fashioned

    Creator: Ólafur Örn Ólafsson

    Ingredients:

    5cl Birkir snaps

    2cl Bourbon

    3cl Simple syrup

    4 dashes of Angostura bitter

    Method: Build up in an old-fashioned glass filled with ice. Top up with good quality tonic water and garnish with orange peel.

The Distillery

At Foss Distillery we specialise in the production of alcoholic drinks from Icelandic materials. The special flavours of our beverages give people all over the world the chance to turn their taste buds on to a uniquely Icelandic experience.

The History

Björk and Birkir, our very first two products to be made, are natural products based on Icelandic birch, Icelandic water and high-quality corn spirit. The sweet birch sap is collected from the trees in the spring and made into a syrup that conveys a fresh and memorable savour. The birch sprigs in each bottle are individually hand-culled from a forest in Iceland, and add a special touch to the appearance of the product.

Our aim with Björk and Birkir is to capture the experience of a spring night in Iceland, the moment when, after rain has cleared, the dew settles on the leaves of the birch trees on a wooded hillside.

Birch has been noted in writings from as early as 1860 for its health-promoting properties. For centuries our ancestors saw it as having a stimulating and healing effect and used it for herbal treatment of various ailments. Dwarf birch (Betula pubescens) has a number of health-promoting properties, but that is not the only reason why we chose birch for the production of these drinks. The main reason is the flavour, which is unique. Icelandic birch is easily recognisable by its delicate dentate leaves and silver-hued papery bark. About a third of Iceland is thought to have been covered in birch woods when the first settlers arrived nearly 1,150 years ago, which shows that the tree had fully adapted to the windy and changeable conditions in the country. Our policy is to interfere as little as possible with Nature, and so we take the sap from the trees at the best time for the trees and collect the decorative sprigs when cuttings are made by specialists to thin the woods and facilitate natural growth.

A great review of our Björk liqueur (in Icelandic only)

Hér á Matviss kunnum við að meta vandaða innlenda framleiðslu og tökum því ávalt fagnandi þegar nýtt innlent áfengi lítur dagsins ljós. Að okkar mati er hreinlega leitun að íslenskara áfengi en því sem unnið er úr birki. Þannig er nýjasta vinkona okkar, hún Björk, íslenskari en sumarnætursólin og sæt eins og íslenska kvenfólkið; áhugaverður íslenskur líkjör sem vert er að líta betur á.

Björk er framleidd af Foss Distillery, ungu íslensku fyrirtæki sem notar alíslenskt birki við framleiðslu áfengra drykkja. Að baki Björk, og bróður hennar, honum Birki, liggja bæði vísindi og list. Mikil rannsóknarvinna fór í að finna hvernig nýta mætti birki með þessum hætti, sem skilaði sér í nýung á markaði, það er birkisíróp og þau brögð sem unnin eru úr birkinu. Listin er þó ekki langt undan því vínþjónninn og, leyfi ég mér að segja, listamaðurinn á sviði áfengra drykkja, Ólafur Örn Ólafsson setur sitt mark á drykkina. Að sögn vildi Ólafur að drykkirnir fönguðu íslenska sumarnótt hvar birkiilmurinn gýs upp í dögginni. Auk þess hefur hann, ásamt fleirum, búið til úrval kokteila er innihalda systkinin Björk og Birki og líta þeir hreint glæsilega út.

Björk 2

Í glasi er Björk skærrafgullin. Í nefi er sætur skógarilmur sem og viður og birkianganin er greinileg. Ilmurinn er nokkuð þungur og minnir á gróðurangan í íslenskri náttúru í rigningu. Í munni finnur maður ávaxtasætu, við og greinilegt birki. Sætan er þung og ákveðin, ögn væmin. Þarna eru líka kryddaðir tónar og bragðupplifunin minnir pínu á bandarískan sarsaparilla eða rótarbjór, fyrir þá sem það þekkja. Að endingu eru þarna tannín eða álíka sem skapa þurrk og smá beiskju sem gerir bragðupplifunina meiri og dýpri. Eftirbragðið er stutt og heitt.

Björk 3

Ég verð að taka hatt minn ofan fyrir Ólafi Erni vínþjóni og teyminu hjá Foss Distillery því þessi hugmynd að skapa drykk sem vekti hughrif um íslenska sumarnótt í náttúrunni gengur fullkomlega upp. Það eru nákvæmlega þær myndir sem koma í huga mér þegar ég smakka Björk. Þarna eru birkið í forgrunni og þungur sætur ilmur sem er eins og einhver hafi tappað andrúmslofti íslenskra rigningarsumarsnótta á flösku. Magnað! Burt séð frá hughrifum er drykkurinn sjálfur ljómandi góður.  Að vissu leiti minnir bragðið á sæt eftirréttarvín, af einhverjum ástæðum kom Disznoko Tokaji í huga mér, en biturleikinn að endingu drepur það. Kryddunin og beiskjan í lokin færa Björk nær gini, en þó er alls ekki hægt að segja að hún beinlínis líkist því. Hún stendur ein og einstök í heiminum, líkt og íslenska náttúran. Hvort sem þú ert áhugamaður um íslenska náttúru eða góð vín þá er Björk drykkur sem þú þarft að smakka.

Þótt Björk sé skemmtileg eins og sér, t.d. fyrir eða eftir mat, þá kann hún sig best í kokteilum. Svona má njóta hennar út í ystu æsar:

Björk Tonic

Þennan ofureinfalda drykk bjó Ólafur Örn vínþjónn til. Ég prófaði hann um daginn á Slippbarnum og var mjög hrifinn.

  • Vandað tonic til að fylla glasið.
  • Ísmolar

Fyllið tromlu eða hefðbundið G&T glas með ísmolum og hellið Björk yfir. Fyllið glasið með tonic og skreytið með sítrusberki.

Freyðandi Björk

Þessi er alveg tilvalinn fordrykkur. Er brúðkaup, stórafmæli eða flott veisla í plönunum? Þá er þetta drykkurinn til að byrja kvöldið.

  • Þurrt freyðivín til að fylla glasið

Hellið Björk í hefðbundið freyðivínsglas. Haldið skeið á hvolfi yfir opinu á glasinu og hellið freyðivíninu yfir skeiðina og ofan í glasið. Þetta býr til lagskiptingu í glasinu sem lætur drykkinn líta út eins og milljón dollara. Þessu má þó auðvitað sleppa og hella freyðivíninu beint ofan í glasið.

Food and drinks show in Laugardalshöll.

Foss distillery spent the past weekend at the Food and drinks show in Laugardalshöll in Reykjavík. It was a very successful event and our products had a great response from the public. We allowed the public to taste our latest product, birch syrup, and it proved to be a massive success. People and companies are literally waiting for it to be launched. We cannot wait ourselves and are working hard at it!

Cocktail week in London and Kulturnatten in Copenhagen

Foss distillery spent the past week travelling to London and Copenhagen. In London we spent most of our time either in meetings or at NOLA bar where our fabulous American business partners, Avery and Janet Glasser, entertained the crowd with their brilliant New Orleans way of getting them to take their pants off! Kulturnatten in Copenhagen was a more civilised do and we loved how well Björk and Birkir were received by the public. Think it is save to say that the future is ours and we cannot wait to begin the next step in Foss distillery’s history!

Foss distillery is heading to the US

Foss distillery, the makers of the unique Icelandic Birkir Snaps and Björk Liqueur, are heading to the US. All of the necessary documents and licenses have been finalized and the first bottles for the US market are in the final stages of production. The plan is for Björk & Birkir to be available by the beginning of October. Vendetta Spirits, a New Orleans based company, will handle the importation and oversee all the sales and marketing of the products in the US.

Vendetta Spirits is an import company led by the owners of Bittermens, a family-owned producer of hand-made cocktail bitters and liqueurs. Vendetta Spirits specializes in nano-importing unique liqueurs and spirits from small distilleries throughout the European countryside. Co-Founders Avery and Janet Glasser focus on sourcing and importing new products for the massive cocktail community in the US.

Bittermens recently launched a line of Nordic inspired spirits under the name DALA Bittermens and believes that the Foss distillery’s products fit perfectly with their personal vision of getting Americans to experience the unique flavors of the Nordic countries.

Björk & Birkir are uniquely Icelandic – produced by using birch and birch sap and the distillery is thrilled to be in such demand overseas. The products are already available in Denmark, as well as Iceland, and negotiations with several other distributors around Europe are in progress. It is only a matter of time before Foss distillery will be a well known brand around the world.”

Birkir in Greenland!

VESTURPORT Theater Group participated in the new-circus show TOQQARTAT in Greenland a short while ago. They kindly brought some Birkir with them to introduce to their fellow artists at the show and it was a huge success. Svenn Syrin, Greenlands National Theatre Director was clearly moved by the experience and went on to say “it tastes like a summer morning at home in the deep fjords of North Norway”!
