  • Reykjavík Summit

    Creator: Ásgeir Már Björnsson

    Ingredients:

    4,5cl bourbon (Ideally Buffalo Trace but Jim Beam is fine)

    1,5cl Birkir snaps

    1,5cl Sugar syrup (1.5 part sugar to 1 part water)

    3cl Fresh lemon juice

    2cl Champagne

    Egg white

    2-3 sprey Black Lapsang Souchong tea

    Method: All ingredients, apart from champagne and tea, added into a shaker and shaken vigorously without ice. Add ice and shake again. Double strain into a cold cocktail glass which has been sprayed inside and out with the tea and top up with champagne. Garnish with orange peel.

    Ingredients:

    3cl Björk liqueur

    3cl Ginger syrup

    3cl Fresh lime juice

    3cl Sour Apple De Kuyper

    Method: Pour all ingredients into a shaker and shake well with ice. Fine strain into a double old fashioned glass. Garnish with a birch leaf and a slice of apple.

    Is currently sold at UNO restaurant, Hafnarstræti 1 – 3.

    1cl Lemon juice

    1cl Simple syrup

    Champagne to fill up the glass

    Method: Shake all ingredients, except champagne, together and fine strain into a coupe glass. Top up with champagne and garnish with a lemon peel.

    Ingredients:

    3cl Birkir snaps

    3cl Cointreau

    3cl Lemon juice

    3cl Birch syrup

    Egg white

    Method: Dry shake all ingredients without ice for a few seconds, add ice to shaker and shake vigorously and strain over fresh ice into a double rocks glass. Garnish with slice of lemon and a birch twig.

    Ingredients:

    6cl Bulleit Rye Whiskey

    3cl Birkir snaps

    1.5cl St. Germain liqueur

    Dash of lavender bitters

    Method: Pour all ingredients over ice in a mixing glass and stir to chill and dilute. Strain into a coup glass and garnish with a birch twig.

    Method: Pour all ingredients over ice in a mixing glass and stir to chill and dilute. Strain into a coup glass and garnish with a pickle and birch twig.

    1cl Fresh orange juice

    Method: Add all ingredients into a mixer and shake vigorously. Strain into a cocktail glass and squeeze the oil from an orange peel over the glass. Garnish with orange peel.

  • Reykjavík Mule

    Creator: Ólafur Örn Ólafsson

    Ingredients:

    6cl Birkir snaps

    Ginger beer to fill up the glass

    2 slices of fresh ginger

    Method: Build up in a large tumbler filled with ice. Slices of ginger mixed into the drink and garnish with a slice of orange.

    Ingredients:

    5cl Björk liqueur

    Tonic water to fill up the glass

    Method: Build up in a double rocks glass filled with ice. Top up with good quality tonic water and garnish with citrus peel.

  • Birkir Old-Fashioned

    Creator: Ólafur Örn Ólafsson

    Ingredients:

    5cl Birkir snaps

    2cl Bourbon

    3cl Simple syrup

    4 dashes of Angostura bitter

    Method: Build up in an old-fashioned glass filled with ice. Top up with good quality tonic water and garnish with orange peel.

  • Birch Cocktail with Blood Orange

    Creator: Katrín Björk @katrinbjork.com 

    Ingredients:

    1 part Birkir Snaps

    1 part Blood Orange Juice

    1/2 part Dark Simple Syrup

    Few Drops Angostura Bitter

    A dash of Sparkling Water

    Method: Fill a Cocktail Shaker with Ice Cubes and add Birkir, blood orange juice and syrup. Shake well. Strain into a glass, fill up with sparkling water and add few drops of Angostura Bitter.

    Dark Simple syrup recipe:

    Ingredients:

    1 dl Brown Sugar

    1,5 dl Water

    Method:  Place sugar and water into a saucepan and let sugar dissolve over low heat

    DARK SIMPLE SYRUP

    INGREDIENTS

    • 1 dl Brown Sugar
    • 1,5 dl Water

    DIRECTIONS

    1. Place sugar and water into a saucepan and let sugar dissolve over low heat. Pour into a jar and store in the fridge for up to 1 weeour into a jar and store in the fridge for up to 1 week

    Ingredients:

    Fresh Orange Juice 1,5cl.

    Birkir Snaps 3cl

    Dry Curacao 1,5cl

    Lemon 3cl.

    Honey 1,5cl

    Method: Shaken with fresh mint and double strained. Garnished with fresh mint and orange zest.

  • Birch Martini

    Creator: Leó Ólafsson

    Ingredients:

    6cl Eimir vodka

    1 bar spoon Bianco extra dry

    2 dashes Lemon bitters – Fee Brothers

     

    Method: Stir together in a mixing glass. Strain into a coupe glass and garnish with a lemon spiral and a birch twig.

     

  • Bluhaze Bitter

    Creator: Leó Ólafsson

    Ingredients:

    4,5cl Börkur bitter

    2,25cl Citric Acid

    2,25cl Blueberry Syrup

    2 dashes Lemon bitters

    1 bar spoon Bitter Truth Violet liqueur

     

    Method: Mixed over ice in a whiskey glass and stir for 15-20 sec. Garnish with blueberries and salvia.

  • Mr. Bark

    Ingredients:

    6cl Börkur bitter

    1,5cl Moss syrup

    2 dashes Aztec Chocolate bitters

     

    Method: Mixed over ice in an old-fashioned glass and stir for 15-20 sec. Garnish with orange peel.

  • Dew

    Creator: Leó Ólafsson

    Ingredients:

    3cl Eimir vodka

    3cl Lemon juice

    3cl Sugar syrup

    1,5cl De Kuyper Elderflower

    1,5cl De Kuyper Apricot brandy

    Sparkling water

     

    Method: Add all ingredients into a shaker, shake vigorously and double strain into a Champagne glass. Top up with sparkling water and stir with a bar spoon. Garnish with a birch twig.

  • Petrichor

    • 3 cL Rhum St. Barth Cool (or other blanc rhum agricole)
    • 1.5 cL Birkir snaps
    • 1.5 cL Oloroso sherry
    • 0.5 cL woodruff syrup
    • 2 dashes Peychaud’s bitters
    • 1 dash Fee Brothers Rhubarb Bitters
    • 2 inches fresh lemongrass

     

    Method: Place the lemongrass and woodruff syrup in a mixing glass and muddle thoroughly. Add remaining ingredients and ice to the mixing glass, stir to chill. Strain into coupe or aperitif glass. Garnish with lemongrass and cherry.

    3cl Koskue gin (barrel aged gin from Finland with orange and black pepper notes)
    2cl lemonjuice
    0,5cl sugar syrup

    Method:
    Mix ingredients in a cocktail shaker. Dry shake, add ice and shake until cold. Double strain into a cold cocktail glass. Squeeze aromatic oils from lemon peel on top. Garnish with lemon peel.

The Distillery

At Foss Distillery we specialise in the production of alcoholic drinks from Icelandic botanicals. The special flavours of our beverages give people all over the world the chance to turn their taste buds on to a uniquely Icelandic experience.

The History

Björk and Birkir, our very first two products to be made, are natural products based on Icelandic birch, Icelandic water and high-quality corn spirit. The sweet birch sap is collected from the trees in the spring and made into a syrup that conveys a fresh and memorable savour. The birch sprigs in each bottle are individually hand-culled from a forest in Iceland, and add a special touch to the appearance of the product.

Our aim with Björk and Birkir is to capture the experience of a spring night in Iceland, the moment when, after rain has cleared, the dew settles on the leaves of the birch trees on a wooded hillside.

Birch has been noted in writings from as early as 1860 for its health-promoting properties. For centuries our ancestors saw it as having a stimulating and healing effect and used it for herbal treatment of various ailments. Dwarf birch (Betula pubescens) has a number of health-promoting properties, but that is not the only reason why we chose birch for the production of these drinks. The main reason is the flavour, which is unique. Icelandic birch is easily recognisable by its delicate dentate leaves and silver-hued papery bark. About a third of Iceland is thought to have been covered in birch woods when the first settlers arrived nearly 1,150 years ago, which shows that the tree had fully adapted to the windy and changeable conditions in the country. Our policy is to interfere as little as possible with Nature, and so we take the sap from the trees at the best time for the trees and collect the decorative sprigs when cuttings are made by specialists to thin the woods and facilitate natural growth.

Mysa í vín

Áfengi unnið úr mysu. Það hljóm­ar kannski mis­vel í eyr­um manna en Mjólk­ur­sam­sal­an leit­ar samt sem áður leiða til þess að koma því á markað. Þetta verður lík­lega gert í sam­starfi við ís­lenska áfeng­is­fram­leiðand­ann Foss Distillery sem brugg­ar meðal ann­ars Björk og Birki snöfs­in.

Björn Sig­urður Gunn­ars­son, vöruþró­un­ar­stjóri MS, seg­ir fyr­ir­tækið vera að leita leiða til þess að full­vinna sín­ar afurðir. Það sé bæði hag­kvæmt og um­hverf­i­s­vænt.

Mysa fell­ur til við osta- og skyr­gerð en auk þess að inni­halda ýmis steinefni og víta­mín er í henni mjólk­ur­syk­ur. MS hef­ur um nokk­urn tíma verið að reyna nýta mys­una bet­ur og þá meðal ann­ars með því að búa til mysu­próteinþykkni sem notað er í Hleðslu.

Hugs­un­in er að þykkja mjólk­ur­syk­ur­inn og búa til úr hon­um et­anól, eða sem kallað er spíri í dag­legu máli.

Í fram­haldi af því er hægt að nota spír­ann til nokkr­ar afurðir, líkt og vín, í iðnað eða sem eldsneyti. Björn seg­ir mest­an ávinn­ing að hafa upp úr vín­inu og er því helst verið að skoða þá leið þrátt fyr­ir öðru sé einnig haldið opnu.

Fá styrk til rann­sókna

Mjólk­ur­sam­sal­an fékk á dög­un­um vil­yrði frá Tækniþró­un­ar­sjóð fyr­ir styrk til þró­un­ar á hug­mynd­inni. Ekki hef­ur verið samið um styrk­inn en farið verður yfir mál­in á næst­unni.

Björn bend­ir á að styrk­ur­inn sé þannig upp­byggður að mót­fram­lag sem jafn­gild­ir hon­um þurfi að koma til af hálfu fyr­ir­tæk­is­ins. „Stóru fyr­ir­tæk­in koma inn í þetta til þess að skaffa mót­fram­lag og rann­sókn­ar­pen­ing­ur­inn fer því í rann­sókn­ar­starfið hjá stofn­un­um og sprota­fyr­ir­tækj­um,“ seg­ir Björn.

Þetta verk­efni verður unnið í sam­starfi við Matís og mun styrk­ur­inn því renna þangað.

Mjólk­ur­sam­sal­an hef­ur ekki mikla reynslu í vín­gerð og hef­ur því leitað til ís­lenska ný­sköp­un­ar­fyr­ir­tæk­is­ins Foss Distillery. Björn seg­ir þá hafa tekið vel í hug­mynd­ina þar sem ákveðinn sjarmi fylgi því að geta notað ís­lensk­an spíra í áfengið.

Styrk­ur­inn er til þriggja ára en Björn von­ast til þess að verk­efnið gangi aðeins hraðar. Aðspurður hvort um mikla fjár­fest­ingu sé að ræða seg­ir hann nokk­urn kostnað fylgja því að koma upp verk­smiðju. „En það er eitt­hvað sem við telj­um þess virði. Við fáum betri nýt­ingu og það er um­hverf­is­leg­ur ávinn­ing­ur,“ seg­ir Björn.

MS hef­ur verið að huga að fleiri ný­sköp­un­ar­verk­efn­um und­an­farið en fyr­ir­tækið vinn­ur nú einnig að að þróun á til­bún­um drykkj­um í sam­starfi við Cod­land.

Cod­land hef­ur unnið að þróun hágæða kolla­genvöru úr ís­lensku þorskroði í sam­starfi við Matís og með styrk frá Tækniþró­un­ar­sjóði. Mark­miðið er að búa til nátt­úru­lega vöru sem teng­ir sam­an land­búnað og sjáv­ar­út­veg.

I had the idea of combining three variations of one flavour and then putting them back together so that it becomes more than the sum of its parts. Max and I finalise the twig garnish – we are hoping it is implicit not to gnaw it.”

Foss distillery is extremely proud to announce that Drink Factory has been working on a new cocktail called “Initials” for one of the worlds best cocktail bar, 69 Colebrook Row. Using only our new birch vodka, birch bitter and birch syrup! The products are not even out yet but surely are getting some serious attention from some serious players!

Previously, Drink Factory had developed a cocktail for the renowned Zetter Townhouse in London using our beautiful Björk liqueur. This followed with a huge interest from Drink Factory in Foss distillery’s product development. The products used in this new cocktail at 69 Colebrook Row, or better known as “The Bar With No Name”, have not even been launched here in Iceland. Icelandic dairy and distillery team up to making liqueurs out of milk

Soon you might be able to sip Icelandic liqueurs made with alcohol distilled from all Icelandic ingredients: and milk. The Icelandic dairy company MS aims at using whey, which is a by-product when producing processed milk products, to manufacture ethanol. The ethanol would then be used to create alcohol which the distillery Foss would aims at use to manufacture spirits.

Mjólkursamsalan stefnir á að nýta þá mysu sem fellur til við framleiðslu á osti í etanólframleiðslu. Etanólið verður svo líklegast nýtt í framleiðslu á vínanda. Björn S. Gunnarsson, þróunarstjóri hjá Mjólkursamsölunni, segir að verkefnið sé á frumstigi. Það sé unnið í samstarfi við Matís, Háskólann á Akureyri og Foss distillery.

Yet another Wednesday drink. This time presented by a true viking. And rightfully so, she’s the only Icelandic cocktail authority known to us in Copenhagen.

Yet another Wednesday drink. This time presented by a true viking. And rightfully so, she’s the only Icelandic cocktail authority known to us in Copenhagen.

The birch trees don’t grow much higher than a human in Iceland, despite volcanic ash enriched soil, sulphuric thermal water and (at least in peak summer) everlasting sunshine. Let’s blame it on oil-spills and fracking in the gulf of Mexico. But we all know that quantity does not necessarily means quality. These birch trees make quite a tasty liqueur and plentiful Icelandic mineral water (among other ingredients) makes for a fantastic Gin. For LONG ICELADIC ICED TEA we used Vor Pot Distilled Gin, Björk Birch Liqueur, Camomile Sirup, Lemon Juice and chilled, sparkling Mint Tea. Although your tonights drink will not be touched by a viking half-goddess, your common barkeep will try his best to make it as well tasting as possible.
